An ANKO client runs a well-known Indian food company in the United States. The company has many brick and mortar stores across the U.S., and their products are also sold in supermarkets and through wholesale channels. This client was purchasing pre-made tortillas and handmaking Burritos, but rising labor costs in the U.S. necessitated a change to automated production. They learned about ANKO through their peers, and scheduled product test runs with ANKO Food Tech. After several trials and adjustments, our team assisted the client to be able to produce Burritos made with Chicken Tikka and Vegetable Curry fillings.

Solution 1. Resolving issues with dry/tough Tortillas

This client sent their sample tortillas to ANKO Food Tech (U.S.) for production trials. The tortilla was too hard to fold when cold and resulted in deep creases in the wrapper. We tried steaming to soften the tortillas, but the result was not satisfactory. Then, we microwaved the tortillas trying several different heating temperatures and cook times, and found the most suitable tortilla temperature for machine production is 72°F to 76°F. Finally, we helped the client develop a 5.5 oz Burrito presented the perfect the appearance and taste.

Solution 2. Production Breakthrough – Making Burritos with high water content filling.

The client also wanted to produce a Curry Vegetable Burrito using curry made with carrots, green beans, and potatoes. The water content of curry is relatively high, and a lot of sauce is presented during production, making it difficult to form a Burrito. Burritos can be filled with a variety of filling ingredients, such as viscos chicken and cheese, diced onion and ground beef, and even sweet burritos filled with chocolate pastes. Hence, the BR-1500 Burrito Forming machine is designed with an extra-large filling hopper and an optimized filling system that can process up to 80kg (176lb) of filling in the hopper. This filling system significantly reduces refilling time during production. The filling screw does not over-process the ingredients, and it is designed to gather the filling for precise extrusion on the Tortillas.

The BR-1500 Burrito Forming machine has a capacity of making 1,000 Burritos per hour. It can use 9.5 to 10.5-inch Tortillas to make Burritos that are 150 to 160 mm in length, and between 125 to 145 grams per piece. It only requires filling the hopper with desired ingredients, and the machine can automatically fill, fold and wrap the fillings in the Tortilla to make delicious Burritos. Burritos originated in Mexico; a flour tortilla wrap filled with various delicious fillings. In Mexico, burritos are usually made with 6-to-8-inch tortillas, and the filling ingredients are relatively simple. A classic burrito is filled with rice, beans, meat, cheese and fresh vegetables, and served with salsas, guacamole or sour cream. When the burrito was introduced to the United States, it was embraced by the local food culture and became a popular food of convenience, and a staple. A Breakfast Burrito wraps up bacon, eggs and potatoes, while Kogi Burrito adds Korean flavors, and Californians are very proud of their Burritos filled with Carne Asada (grilled steak) and fries, as well as the extra-large Mission Burrito that can be as big as 9 or 10 inches long. Well-known food companies such as Chipotle, Taco Bell and other brands have been promoting Mexican cuisines internationally, and now Burritos can be enjoyed in Asia, Europe, and Australia.

Wrapper: Flour Tortillas, Filling: Boneless chicken leg meat/chili powder/cumin powder/olive oil/sea salt/black pepper/garlic/cilantro/canned kidney beans or black beans/rice/limes/tomatoes/spring onions/iceberg lettuce/cheddar cheese/Greek yogurt

Filling preparation

(1) Place boneless chicken meat in between two parchment papers, lightly pounded to 0.5cm thick. Then in a container, marinate the chicken with a mixture of chili powder, cumin powder, olive oil, sea salt, black pepper. (2) Heat a pan, then quickly sear the chicken on both sides, remove and set it aside. (3) Thinly slice the garlic and remove cilantro leaves and thinly slice the stems. Remove beans from the can and then rinse them with water. Zest the lime peel and shred the lettuce. (4) In a heated pan, add olive oil, and sauté the garlic and cilantro stem slices for a minute. Then add the beans and rice to the pan to cook; season the rice and beans with lemon/lime zest and cilantro leaves right before removing it from the heat. (5) Place the diced tomato, cilantro, and onions in a bowl, add lime juice, salt, and black pepper to make fresh pico de gallo.

Assembly

(1) Lightly toast the Flour Tortillas on a pan till soft, then set aside. (2) Place rice and beans, pico de gallo, shredded lettuce, chicken, cheddar cheese, and Greek yogurt onto the tortilla, then roll it into a Burrito.
