Solution 1.How to prevent Har Gow wrappers from breaking and improve the overall product texture?

ANKO's engineers made Har Gow using the client's original recipe and the HLT-700XL Multipurpose Filling and Forming Machine. The products turned out to be too firm, and some wrappers had cracks. After ANKO's adjustments, the quality and size of the Har Gow met the client's product specifications, including perfect appearance and texture and weighing 23g to 25g each. The products are then manually boxed.

Flour/Potato Starch/Hot Water/Oil/Shrimp/Bamboo Shoots/Ground Pork/Scallions/Salt/Stock Powder/Sugar/Sesame Oil/White Pepper

Making the filling

Finely chop the bamboo shoots and scallions, then mix them with ground pork, and add salt, bouillon/stock powder, sugar, sesame oil, and white pepper to taste.

Making the wrapper

Mix flour and potato starch in a mixing bowl, add hot water, mix it well into a dough, and let it cool. Add cooking oil and knead the dough until it is smooth, then roll it out into a thin log and divide it into small pieces. Flatten each piece of dough into a wrapper; cover the remaining dough to prevent it from drying.

Har Gao Assembling

Take a piece of wrapper and place a spoon-full of filling in the center and a piece of shrimp on top, then seal the wrappers to make Har Gow, preferably with 9-12 pleats. Steam the Har Gao for 5 to 10 minutes, and they are ready to be served.
