The company owns a Cantonese restaurant serving handmade dim sum. With business growth, a lack of supply and problems with staff management had come out. It took an average of three months for a new employee to become fully productive. Therefore, the client started finding an automatic solution. At first, the client knew ANKO by searching from the Internet and visiting IBA Munich, which is a trade show held in Germany every two years, but he didn't contact us until the next IBA Munich. He placed an order without having a machine trial because he thought ANKO had considerable experience in food machinery. He purchased an HLT-700XL Multipurpose Filling and Forming Machine and an EA-100KA Forming Machine. With these two machines, he could make a wide variety of dishes, such as dumpling, steamed dumpling, crystal dumpling, fun guo, soup dumpling, increase production capacity and decrease labor costs. Moreover, when ANKO's engineer conducted on-side commissioning, our engineer helped solve his problem that soup dumplings had no soup.

Soup dumpling, a kind of Chinese dumplings, consists of a piece of dough wrapped around a pork filling and broth jelly that makes the dish delicious and tempting after steaming.
Soup dumplings are usually served hot and accompanied with soy sauce and ginger juliennes. To eat them, in addition to a pair of chopsticks, a soup spoon is necessary. Pick up a soup dumpling gently with your chopsticks and put on the spoon. Then, drink soup by poking the dumpling and pouring the soup on your spoon, or by biting a small hole on the dumpling and sipping. Afterwards, enjoy the soup dumpling with soy sauce and some ginger juliennes.

Handmade Food Recipe

  • Ⅰ. For soup
  • Cook stock with sliced ginger, and chopped ham and scallion.
  • Strain the stock and add gelatin.
  • Pour the soup in a tray and refrigerate it until it jelled.
  • Ⅱ. For dough
  • Boil a bowl of water and add oil into it.
  • Mix bread flour and all purpose flour in a mixer.
  • Add the water into the mixer while stirring.
  • Knead the dough on a floured work surface until smooth and elastic.
  • Wrap the dough with cling film and rest for one hour.
  • Ⅲ. For filling
  • Chop ginger, scallions.
  • Add ground pork, chopped ginger and scallions in a bowl.
  • Season with Shaoxing wine, sesame oil, soy sauce, sugar, salt, and white pepper.
  • Mix and combine them well.
  • Chop the soup jelly into cubes and add into the filling.
  • Mix and combine them together.
  • Ⅳ.
  • Cut the dough into small dough balls.
  • Press a dough ball into a round shape.
  • Use a rolling pin to roll the wrapper along the outer edge.
  • Scoop the filling in the center of the wrapper.
  • Pinch and pleat the edge to seal the wrapper.

Solution 1. The client's soup dumplings were not as juicy as other's.

It had been a problem that the soup dumplings made according to the client's recipe had no soup. During the commissioning and training periods, ANKO's experienced engineer assisted in adjusting the recipe.

This recipe contained a high proportion of soup jelly that was mean to completely solve the problem, but was not applicable to the machine. The machine-made soup dumplings were not perfect in shape and taste. Therefore, our engineer talked to the client and obtained his consent to adjust the production process and ingredients.

HLT-700XL is designed to prevent food wastes

The client had used starch wrapper making machine, but he had been troubled by leftover dough sheets. ANKO's HLT-700XL makes dumplings with extruded dough tubes, rather than die-cut wrappers. Also, it can adept various dough types and viscosity, even starch dough. Therefore, the client can not only solve the problem of food wastes, but also produce many products such as dumpling, crystal dumpling, and fun guo with one HLT-700XL.

ANKO's machine is very flexible. By simply changing the forming mold set, the machine can make various dumplings in different size and shape such as ravioli, calzone, and samosa. To replace the forming mold set with the EA-100KA Forming Machine, the production line can make Chao Zhou dumpling, scallion cake, and Khinkali. The shutter device of the EA-100KA comes in two types – non-pattered and pattered. The pattered shutter device can make attractive pleats on the top of food products.


How does soup dumpling production line work? After putting dough and filling of soup dumplings, the machine automatic extrudes a dough tube and then extrude filling in the dough tube. Finally, the EA-100KA Forming Machine divides the filled dough tube into pieces of soup dumplings with pleats on the top.
