Solution 1. Configuration integration – Meeting various production requirements
The "Xiao Long Bao Integrated Production Line" is a fully automated production solution. The equipment used in this production line can be adjusted to meet clients' various production requirements, including any additional dough and filling feeders for the Xiao Long Bao forming machine. ANKO's "HLT-700U multipurpose filling and forming machine" incorporating the "EA-100KA forming machine" can create up to 6,000 Xiao Long Bao per hour. Robotic arms can automatically place the final products in boxes; each box can be sealed with a packaging machine. The boxed Xiao Long Bao can pass through weighing and X-ray inspection machines on a conveyor belt to be screened for quality control. This production line is suitable for large food factories, central kitchens, and food manufacturers who want to significantly increase their Xiao Long Bao production.
Solution 2. Revolutionary upgrade! The first Xiao Long Bao Integrated Production Line equipped with a "Robotic Arm" and "IoT"
ANKO is the first company to adopt "Robotic Arms" to a Xiao Long Bao Production Line to reduce labor dependence and artificial contamination during production. We selected Epson's four-axis robotic arm with adjustable speed settings to automatically place the delicate Xiao Long Bao into boxes. The low vibration movement, high precision, and agility design ensure all products remain intact during the process, and only minimum labor is required. The "IoT" system provides remote production monitoring services; it only requires a mobile device to access real-time production status, including daily output, wastage, error reports, maintenance reminders, and other alerts to increase factory digital management and prevent unexpected downtime.

1) Food Preparation Equipment
For medium and large Xiao Long Bao manufacturers, food preparation, including dough making, filling, and stock jelly preparation, can be complicated and tedious. A meat grinder, mixer, and seasoning machine can simplify preparation and increase productivity.
2) Automatic Aligning and Rack Loading Machines
For restaurants or ready-to-eat food manufacturers, the Xiao Long Bao needs to be steamed right after production. The automatic aligning and rack loading machine automatically arranges the Xiao Long Bao on each tray and loads the full trays into a cart. HLT-700U
The HLT-700U multipurpose filling and forming machine is designed to produce various authentic food products, including Dumplings, Samosas, Ravioli, Empanadas, etc. The unique filling system can process multiple ingredients, including vegetables, ground meats, and cheeses, to make plumply filled dumplings and stuffed pastries at the capacity of 2,000 to 12,000 pieces per hour. This model is suitable for small and medium-sized food operators, as well as large food factories. The built-in IoT system provides remote access to production status and real-time data and error reports to help managers quickly find and resolve problems. It also monitors the machine's health and maintenance schedule to extend its service life.
EA-100KA
The EA-100KA forming machine is specially designed to make Xiao Long Bao. It can be paired with the HLT-700 series to produce up to 6,000 Xiao Long Bao per hour. ANKO's X-ray inspection equipment can detect contaminants as small as 0.4 mm, such as bone fragments, fish bones, plastic pieces, or metal substances. Xiao Long Bao (Steamed Soup Dumpling) is famous for its scrumptious soup and meat fillings and is known to be one of Taiwan’s delicacies. An acclaimed Taiwanese restaurant chain has rapidly expanded its stores globally while also being nominated as one of the top ten gourmet dumpling restaurants in the world. For creating delicious Xiao Long Bao, it is crucial to have the right recipe and balance, from the wrapper and filling ingredients to steaming time, temperature, and the perfect dipping sauce. In addition to the classic pork filling, they can be made with crab roe, luffa and shrimp, truffle, and foie gras to create savory Xiao Long Bao. Various fruit flavors, sweet bean paste, mashed taro, or chocolate can make the perfect dessert Xiao Long Bao. Some creative producers also use squid ink, cheese, or vegetable juices to color their dumpling wrappers to impress their consumers.
Xiao Long Bao is widely available in restaurants and take-outs establishments, now there are also many frozen Xiao Long Bao options in retail stores. Most of these frozen dumplings require steaming, but some can be microwaved to reheat. Stock Jelly-Pork skin/Pork bone/Water/Ginger/Spring onion/Shaoxing wine, Wrapper-Flour/Warm water, Filling-Ground pork/Shaoxing wine/Salt/Sesame oil/Sugar/Soy sauce/Water/White pepper/Minced ginger/Stock jelly
Prepare Stock Jelly
(1) Slice pork skin into strips and place them in a pot. Add pork bones and water and bring to a boil. (2) Remove pork skin and the bone from the boiling water, then clean them with water. (3) Place the cleaned pork skin and bone in a clean pot. Add water, spring onion, and Shaoxing wine and bring to a boil. Then, turn the heat to low and simmer for 2 hours. (4) Turn the heat off and filter the broth. Let it chill, then put the stock in the fridge to form a stock jelly.
Prepare Wrapper dough
(1) Mix flour and warm water in a bowl to form a dough. (2) Knead the dough until it is smooth, then cover the dough and let it rest for 30 min.
Filling Making Steps
(1) Place ground pork in a food processor and blend it into a paste. (2) Take out the meat paste and mix in all the seasonings. (3) Gently add in diced stock jelly, and do not over mix. (4) Put the filling mixture back into the fridge for at least 15min.
Xiao Long Bao Assembling
(1) Divide the dough into 11g pieces. (2) Use a rolling pin to flatten the dough into a thin wrapper, then add a spoon of filling in the center. (3) Fold the wrapper to seal in the filling to form a Xiao Long Bao. (4) Place the Xiao Long Bao in a steamer to cook, then serve.
