Multipurpose Filling and Forming Machine-Machinery Design for Indonesian Company
The client has two fishing vessels and two fish processing plants to process the six-ton daily catch. One plant is dedicated to mince fish into fish paste, and the other plant is for the production of fish balls and fish products. He purchased a HLT-700XL Multipurpose Filling & Forming Machine and a SD-97W Automatic Encrusting and Forming Machine from ANKO. The HLT-700XL is used for producing deep-fried fish snacks — a new offering made of springy fish paste with a crispy wrapper. And the SD-97W is for making stuffed fish balls. The client's new plant covers 10,000 square meters and employs around 50 people. Their products are mainly sold to local supermarkets in Indonesia such as Carrefour.

Find and solve the problem of mushy fish paste
As our engineer conducted a commissioning in the client's plant, the SD-97W had the difficulty in forming fish ball wrapper. The possible causes might be the ingredients or the equipment. They first eliminated the former because the fish paste was exactly the same as that he brought to ANKO for a machine test. At that time, he was satisfied with the test and everything was fine. Then, our engineer found they stirred fish paste with an emulsifier, instead of a mixer that we used as testing. After changing, the machine works well and smoothly to manufacture fish ball with filling.

Quick forming device for fish balls
The sticky and soft fish paste causes the difficulty in forming by hand. However, ANKO's forming device facilitate the processes of extruding, encrusting, and forming to enhance production capacity and stably form products with uniform appearance and weight. The forming device, or forming shutter, comes in different specifications to meet client's needs such as pleated baozi or drop-shaped food which are comparable to handmade ones.

SD-97W
In this case, the client applied the SD-97W to extrude fish paste and encrust filling, then, through the non-patterned forming shutter, fish balls are formed into round shapes as required. Except for fish balls, SD-97W also can produce dozens of ethnic foods such as kibbeh, falafel, mochi, bao, cookie, etc. It can make either two colors or solid color with a simple change of dough hoppers. The look and taste of foods are able to compare with handmade ones. Moreover, the built-in IoT System is able to monitor and manage food production with integrated food production technology. Food Ingredient
For wrapper-Fish Fillet/Garlic/Shallot/Iced Water/Starch/Egg White/Salt/Sugar/White Pepper, For filling-Ground Chicken/Scallions/Soy Sauce/Salt/White Pepper/Rice Wine
Making the wrapper
(1) Chop fish fillet. (2) Grind garlic and shallot in a food processor, then add chopped fish and further process them into fine paste. (3) Add salt, starch, egg white, sugar, white pepper, and iced water and well mix them until smooth. (4) Prepare a bowl of cold water for collecting formed fish balls.
Making the filling
(1) Chop scallions. (2) Mix chopped scallions, ground chicken, soy sauce, salt, white pepper, and rice wine in a large bowl until they are well combined.
How to make
(1) Wet one hand and a spoon. (2) Put some fish paste in the left/right palm and scoop a spoon of chicken filling on the fish paste. (3) Make a fist to wrap the filling and squeeze them out from the hole between thumb and index finger and scoop the formed fish ball into the prepared cold water (repeat the steps to finish the rest).
