Tailormade for Quesadilla Production! ANKO QS-2000 Solves Many Issues Relate to Labor Shortages and Production Insufficiency
ANKO Team Research Problem Solving or Solution Delivery
Solution 1. The world’s first automated Quesadilla Making Machine! A core component for automated production
Labor shortages and rising minimum wages have become a global issue in the food industry; leading to an inevitable trend for many food businesses to transition into automated production. Traditionally, Quesadillas are handmade and can be labor intensive, yet today there are no automated Quesadilla machines available on the market. ANKO's QS-2000 Quesadilla Making Machine is the world's first, and it requires only two employees to operate the machine. One person is responsible for placing Tortillas on the conveyor, and the other simply picks up the finished products at the end of the conveyor. The machine is designed in a dual-line configuration, and when both lines operate simultaneously, the maximum capacity can reach 2,000 pieces per hour. ANKO can also customize the machine to meet our client’s specific product requirements; we can even add machines to make the entire Quesadilla production line a fully unmanned and automated smart factory.
Solution 2. Exclusive Roller Design combines experience and technology to ensure Quesadillas are evenly filled on the automated production line
Producing Quesadillas manually may result in uneven filling distribution, which can cause the products to deform when they are reheated. This inconsistency in texture and taste may affect the final product and sales performance. ANKO’s QS-2000 Quesadilla Making Machine is designed with two exclusive rollers: first is used to evenly spread out the filling ingredients, and the second helps to form the proper shape of the products. This system ensures that every Quesadilla is made with great consistency and identical thickness.
When creating QS-2000 Quesadilla Making Machine, ANKO's research and development team incorporated information about the processing speed, height, and rotation speed of the rollers and how they effected the amount of and the characteristics of various filling ingredients. Additionally, information about filling distribution ranges were also carefully recorded. The final design of the machine incorporated a manual adjusting device to finetune the thickness of the Quesadillas.
Solution 3. Unique Filling System that can accommodate different production volumes
Most double-line food machines are designed with two filling hoppers. ANKO’s QS-2000 Quesadilla Making Machine is designed with a unique dual processing filling hopper that reduces the frequencies of refilling. The hopper is divided into two compartments, and a filling screw pushes the ingredients to both sides; allowing the filling to pass through a fixed mold onto the Tortilla. This design is more efficient especially when producing large quantities of Quesadillas. ANKO’s QS-2000 can make Quesadillas with 5 – 6-inch Tortillas, and the filling ingredients can weigh from 25 to 40g each. It can produce Quesadillas with a single-line or double-line production depending on the quantity and efficiency required. ANKO can also customize the machine to meet specific product requirements.
Turn the machine on and place Tortillas on the conveyor belt, then Quesadillas can be made quickly and easily. This machine is suitable for food factories, central kitchens, restaurants, and catering companies. The dual-production line can function independently depending on the desired production time and other requirements.
Food Equipment Introduction
- Place the Tortillas on the production line
- Filling automatically extrudes onto the Tortilla
- The machine automatically folds the Tortilla
- The roller presses to form Quesadillas automatically
Based on the specific Tortilla, a positioning and alignment system is designed to achieve optimal filling placement
The core design of the QS-2000 Quesadilla Making Machine lies in the three positioning and alignment system. Since Tortillas are relatively light and easy to slide during the production; a positioning system is used to keep each Tortilla on the center of the conveyor. This ensures each Quesadilla is always perfectly folded. When filling ingredients are extruded onto the center of the Tortilla, the tortilla tends to bounce back after it is folded. After testing numerous versions, ANKO’s team found the optimal solution to ensure each Tortilla is folded, and pressed twice, creating beautiful symmetrically formed Quesadillas.

- Food Culture
Quesadillas are a popular dish in Mexico; they can be found at many street vendors or are often served as a stand-alone meal in restaurants. Quesadillas are made with Tortillas that are filled with various ingredients and cheeses; they are usually heated on a griddle until the cheeses are melted, then served with salsas, guacamole, and sour cream. Recently, Mexican cuisine has become mainstream in the United States; in 2019, Chipotle Mexican Grill – a well-known fast casual chain restaurant added Quesadillas to their menu to increase their revenue. According to recent surveys, Mexican cuisine is preferred by Millennials and Generation Z over Italian and Chinese cuisines.
Many frozen Quesadillas can be found in retail stores and supermarkets, offering flavors such as cheese, chicken, beef, and vegetables. They can be easily microwaved or pan-fried and then served, making them suitable for breakfast or a quick snack anytime. Some people even add slices of bananas, strawberries, apples, and sprinkled cinnamon, or spread the Tortillas with Nutella, or a caramel sauce to create a delicious dessert. With the rise of veganism, vegan Quesadillas are also becoming popular utilizing vegan cheeses and vegetable fillings. Some people replace vegan cheese with potatoes or avocados for a more natural and healthy option. Quesadillas can be made with a great variety of fillings creating personal favorite snacks or just a tasty quick meal, which is one of the reasons why Quesadillas have become so popular.
