Egg Rolls are a popular appetizer in most American Chinese restaurants. They are similar to Chinese Spring Rolls, but the wrappers contain eggs and are twice or 2.5 times thicker than Spring Roll wrappers, hence the name Egg Rolls. Deep fried Egg Rolls are crispy and small air pockets form on the wrappers; this dish may have a Chinese origin, but it was made popular in the US when they were introduced in New York. Every June 10th is National Egg Roll Day in the United States, and many restaurants celebrate this day with special events and promotions. Specialty items such as Giant Egg Rolls made for sharing are created, and some business owners donate Egg Rolls to Food Banks to share and celebrate their love of this delicious food.

Egg Rolls are commonly made with store-bought Egg Roll wrappers, and a combination of cabbage and pork filling. Egg Rolls are filled, rolled, deep-fried, and served with dipping sauces. Making Egg Roll Filling

(1) Sautee ground pork in a heated wok with cooking oil, season it with salt and pepper (2) Add minced garlic and minced ginger into the ground pork (3) Then add chopped cabbage and minced ginger to the wok and stir fry (4) When the cabbage is cooked thoroughly, add soy sauce and toasted sesame oil to the mixture, then remove the wok from heat

Forming Egg Rolls

(1) Mix flour with water into a paste (2) Place filling ingredients onto the Egg Roll wrapper (3) Fold the wrapper over the filling and wrap it from the sides (4) Form the Egg Roll and seal the edges with flour paste

Frying Egg Rolls

(1) Heat cooking oil in a frying pot (2) Place Egg Rolls in frying oil when the temperature reaches 375°F, then deep fry for 3-5 min (3) When the Egg Roll turns golden brown, it can be served with dipping sauces
