Kebbeh is a Middle Eastern Levantine dumpling dish traditionally made of bulgur (smashed wheat), minced onions and finely ground lean beef or lamb. Names are slightly different, you might hear kobeba, kubbeh, kebbah or kubbi, (Arabic: كبة). It is popular food in Arabian countries, such as Lebanon, Palestine, Jordan, Syria, etc.
Handmade Food Recipe
- For kubba dough: to make kubba dough, mix semolina flour, salt and presoaked bulgur all together and then knead it until it is elastic and firm.
- For filling: (1). Chop onion and celery stalk. (2). Start to stir-fry onion and ground meat until get brown, add more onion, pepper, celery stalk, and parsley, then cumin, turmeric and a little lime zest. (3).Fry them until they look dry.
- When both filling and dough are ready, grab a small piece of dough and make it flat like a little cookie. Use a finger to make a hole at the center of dough, put a small amount of filling in the hole. Wrap up it well. It can be deep-fried or simmered in soup.
