ANKO NDL-100 Commercial Noodle Machine Launch to Create Innovative Products for Noodle Manufacturers

In Taiwan, most traditional noodle machines have good productivity but are limited in the types of noodles the machines can produce. Hence, ANKO’s team worked with Taiwan’s Food Industry Research and Development Institute to test and co-create an innovative noodle extruding machine. One client who owns a noodle factory approached ANKO for equipment that can produce unique noodles, and this company was the first to test ANKO’s NDL-100 Noodle Extruder. The client found ANKO’s machine to be highly productive with the ability to produce many different types of noodles which met their production needs and thus they purchased the machine.

Solution 1. Produce different types of noodles by simply changing the molds.

To produce noodles of different widths with a traditional press type noodle machine would require shutting down the entire operation to change the blades. ANKO’s NDL-100 Commercial Noodle Machine uses different molds to press out noodles into circle-shaped, heart-shaped, fish-shaped, dumbbell-shaped and triangle-shaped noodles; it only takes about 5 minutes change the molds. ANKO can provide customized molds upon request.

Solution 2. ANKO and Taiwan’s Food Industry Research and Development Institute (FIRDI) created a win-win situation

This noodle machine research and development project took a little over a year and went through extensive trials. ANKO’s engineers worked with Taiwan’s Food Industry Research and Development Institute (FIRDI) to perfect this machine. Noodles made by ANKO’s Commercial Noodle Machine were tested on its elasticity, texture and other physical characters and the products were approved by FIRDI. Additionally, the machine is capable of processing various types of dough made with wheat flour, gluten-free flours, and even fish paste added to the dough to produce many different delicious noodles.

Solution 3. ANKO’s NDL-100 Commercial Noodle Machine is highly productive, easy to clean and requires minimal employees to operate

The Continuous Pressing Roller is designed to produce one specific type of Noodle at a time. When switching to a different type of Noodle production, the entire machine needs to be cleaned thoroughly, otherwise the residue from the previous product may affect the taste and texture of the new Noodles.

Innovative Designs for Professional Noodle Producers

ANKO’s engineers installed a unique auger in the NDL-100 Commercial Noodle Machine to ensure noodles will be extruded proportionally. The enlarged dough hopper has capacity for 25-30kg (55-66lbs) of dough, which is 3-5 times larger than most noodle machines. The cutting blades are precisely timed and regulated by a control panel thus enabling noodles to be as long as 15cm or 5.9inch and cut into a single serving portion. This machine also has an ergonomic design for smaller scale producers accommodating employees who might prefer to sit or stand during production. A conveyor belt can be attached to transport raw noodles for further processing procedures such as boiling, deep-frying or heat-drying.

How to make

(1) Whisk salt, oil and water together (2) Add the water mixture into flour and form the dough by hand (3) Cover the well kneaded dough with saran wrap and let it rest in the refrigerator for at least an hour (4) Flatten the well-rested dough into a thin dough sheet (5) Sprinkle the dough sheet with flour and fold the dough three times (6) Cut the folded dough sheets into noodles of desired thickness (7) Sprinkle with a little more flour to prevent noodles from sticking
