It had been a problem that the soup dumplings made according to the client's recipe had no soup. During the commissioning and training periods, ANKO's experienced engineer assisted in adjusting the recipe.

This recipe contained a high proportion of soup jelly that was mean to completely solve the problem, but was not applicable to the machine. The machine-made soup dumplings were not perfect in shape and taste. Therefore, our engineer talked to the client and obtained his consent to adjust the production process and ingredients.

ANKO's machine is very flexible. By simply changing the forming mold set, the machine can make various dumplings in different size and shape such as ravioli, calzone, and samosa. To replace the forming mold set with the EA-100KA Forming Machine, the production line can make Chao Zhou dumpling, scallion cake, and Khinkali. The shutter device of the EA-100KA comes in two types – non-pattered and pattered. The pattered shutter device can make attractive pleats on the top of food products.

How does soup dumpling production line work? After putting dough and filling of soup dumplings, the HLT-700XL machine automatic extrudes a dough tube and then extrude filling in the dough tube. Finally, the EA-100KA Forming Machine divides the filled dough tube into pieces of soup dumplings with pleats on the top.

Soup Dumplings originated in China, also known as Xiaolong Bao or Xiaolong Soup Dumplings (Xiaolong meaning a small steamer basket). Soup Dumplings are usually made with thin wrappers, and the fillings are savory and soupy. They are usually served with rice wine vinegar and young ginger juliennes at breakfast, as Dim Sum, or as part of a luxurious dinner. Soup Dumplings are traditionally filled with ground pork filling, but recently cheeses, curry powder, mala (Szechuan style spicy), and even truffles can be added to create a modern twist. Other ingredients, such as luffa, crab roe, and shrimp, can also be incorporated. “Din Tai Fung” (鼎泰豐) is a world-famous Xiaolong Soup Dumpling company based in Taiwan; they are known for their 18-fold pleated Xiaolong Soup Dumplings. The expansion of Din Tai Fung restaurants has introduced Soup Dumplings to the world. This company has recently inspired a new Chinese Dim Sum trend and made this delicacy more available to different countries. Now, you can find more and more Xiaolong Bao with 18-fold pleats in restaurants; additionally, these dumplings can be made savory or served as sweet dumplings filled with bean pastes, taro, chocolate, strawberry, and mango flavored fillings to appeal to different customers.

For soup-Stock/Ham/Scallion/Ginger/Gelatin, For dough-Bread Flour/All Purpose Flour/Water/Oil, For filling-Ginger/Scallions/Shaoxing Wine/Sesame Oil/Soy Sauce/Sugar/Salt/White Pepper/Ground Pork

Making the Soup

(1) Cook stock with sliced ginger, and chopped ham and scallion. (2) Strain the stock and add gelatin. (3) Pour the soup in a tray and refrigerate it until it jelled.

Making the Dough

(1) Boil a bowl of water and add oil into it. (2) Mix bread flour and all purpose flour in a mixer. (3) Add the water into the mixer while stirring. (4) Knead the dough on a floured work surface until smooth and elastic. (5) Wrap the dough with cling film and rest for one hour.

Making the Filling

(1) Chop ginger, scallions. (2) Add ground pork, chopped ginger and scallions in a bowl. (3) Season with Shaoxing wine, sesame oil, soy sauce, sugar, salt, and white pepper. (4) Mix and combine them well. (5) Chop the soup jelly into cubes and add into the filling. (6) Mix and combine them together.

How to make

(1) Cut the dough into small dough balls. (2) Press a dough ball into a round shape. (3) Use a rolling pin to roll the wrapper along the outer edge. (4) Scoop the filling in the center of the wrapper. (5) Pinch and pleat the edge to seal the wrapper.
